Every week, Eddie Kim and Mathew Ramsey will share a shift drink and swap war stories from behind the line with chefs, bartenders, bakers, brewers, and anyone who touches this all-encompassing industry. This week we cut a swath through the studio with co-founder and edge master of District Cutlery, Derek Swanson. We put a knife-point on the future of American knife-making, re-honing a businesses direction, and humble beginnings. Mathew takes off his cutlery training wheels, Eddie pays tribute to the Gold standard in food criticism, and Derek lives his best day off. Oh, and everyone gets ICED.
